Lamm-Gemüse-Ragout auf Joghurt
Für das Lamm-Gemüse-Ragout benötigt man 200 g frische Bohnen, 1 Prise Salz, 3 rote Paprikaschoten (rot, gelb, orange), 1 Zwiebel, 1 kleines Stückchen Ingwer, 300 g Lamm, 1 TL Speisestärke, 1 TL Öl, 1 TL Garam Masala Gewürzmischung, 1 TL Chilipulver, 1 TL Kurkuma, 225 ml Gemüsebrühe, 250 g fettarmen Joghurt.
Zuerst werden die Bohnen geputzt und in kochendem Salzwasser ca. 5 Minuten gegart, danach abgießen und abschrecken. Nun werden die Paprikaschoten geputzt und in Rauten geschnitten, eine Zwiebel abziehen und würfeln, Ingwer schälen und fein reiben. Das Lammfleisch in mundgerechte Stücke schneiden und in der Stärke wenden. Anschließend wird Öl in einer tiefen beschichteten Pfanne oder im Wok erhitzt und das Lamm hineingegeben. Gewürze dazugeben und von allen Seiten kräftig anbraten, anschließend herausnehmen. Nun werden die Zwiebelwürfel, der Paprika und Ingwer in die Pfanne gegeben und unter Rühren an angedünstet, mit Gemüsebrühe ablöschen und ca. 5 Minuten schwach köcheln lassen. Die Bohnen und das Lamm in die Pfanne geben und 5 Minuten garen, danach den Joghurt unterrühren, jedoch nicht kochen lassen. Das fertige Ragout nochmals mit Gewürzen abschmecken. Dazu Fladenbrot reichen.
